Bruschetta With Tomatoes

Just wanted to say hi and give another sample of what is on my site
This one is marked under appetizers, thought this one would be fun for those of you who like to entertain! so why not serve something healthy that is also delicious!!
You'll need a loaf of Italian or French Bread (Cut into 1/4" thick slices,16)
3 cloves of garlic
1 medium onion, coarsely chopped
2 large plum of tomatoes, diced
1/4 cup of thinly sliced fresh basil
2 tsp of balsamic vinegar
a dash of ground black pepper and salt (optional) season to your liking.
preheat oven to 325
Cover a baking sheet with foil
1. place the bread on the sheet, in a single layer, coat both sides with a no-stick spray.
Bake for 20 minutes until golden.
2. cut 1 clove of garlic in half rub the cute sides over the tops of toast. (discard the garlic halves)
3. Mean while coat a non stick skillet with no stick spray and add the onions. Cook over medium high heat and cover, stirring occasionally for 3 to 4 minutes or until the onions start to release liquids. Reduce the heat to medium and finish cooking until its a light golden brown (if needed add 1 to 2 tsps of water to keep it from sticking to the pan)
5. Add the tomatoes and the 2 cloves of garlic to the skillet. Cook, stirring occasionally for two to three minutes, til the tomatoes are slightly soft. Stir in the basil and vinegar, with the dash of black pepper and salt.
Place a spoonful on each garlic toasted toast and serve.
